FOR 4 PEOPLE - Jacques Scallops 16 pieces - Oysters 2 rooms - Capers 0.01 kg - Granny Smith apples 0.02 kg - Lime (juice) 0.5 kg - Celeriac 0.2 kg - Mayonnaise 1 / 4 L - Pine Nuts Crushed - Mustard 1 bunch chives - Gingerbread 1 / 2 piece - Honey 0.2 kg - Lime Chutney - Four Spices 0.005 kg - Olive Oil - Tabasco, salt, pepper
Tartar: Cut 4 St. Jacques diced apple and diced, chopped oysters and capers. Mix everything and season with salt, pepper and Tabasco, pine nuts, chives and vinaigrette of olive oil and lime juice.
Remoulade: Cut the celery into fine meal and season with salt, pepper and Tabasco, pine nuts, chives, mustard and mayonnaise.
